Okay because I'm in a severe P4 mood and I am being reminded of how awesome the OST is, my vote will go to P4 for now. Really, if there is one thing that makes the game ~not~ boring even though you're tasked to spend a lot of time going around the town and the school, it's because of the awesome music.

Variety is the name when I listen to game soundtracks. I try not to limit myself in choosing the themes for games, since the games I like doesn't always have to have great music, at least for my ears. For example is that even when I loved Steve Jablonsky's music for Transformers, I didn't like his score for Command and Conquer 3, but then liked it in Gears of War.

Anyway, to answer the question, I have a list of things to put here, but it would take hours rummaging through my stuff to jot them down (because while I don't remember consciously, my ears do). So I'll be populating this with what's on top of my head and updating (or discussing, whatever the case may be) when I remember others. But generally I do prefer orchestral pieces that set mood, instead of vocal tracks that are usually just used for theme or character image songs.

I have to agree with the orchestral tracks. With that in mind, a lot of the soundtracks I like happen to feature an orchestra of some kind in it. However, I have soft spot for a couple of upbeat pop tracks that just help lighten up my mood while playing.

Persona 3 & Persona 4; I like Meguro's upbeat tracks in contrast to the dark tone of the story. When it's school time, it's all bubbly and natural but when it's battle time, the music does well in setting the mood.

Final Fantasy Tactics & Final Fantasy XII; These two games get special mention primarily because they were mostly composed by Hitoshi Sakimoto and Masaharu Iwata. Just as these two games stand out from the other titles because of their plot and overall feel, their soundtracks are also quite different from Uematsu's style.

Final Fantasy V to Final Fantasy VIII; I didn't include IX and X mostly because I didn't really notice the music from those games much. Which, at least for me, makes then not really worth including.

Suikoden II; Memorable music which can ring in my head for hours and I'd never get tired of it. That track of Two-River is playing in my head as I type.

Guilty Gear XX; "Let's Rock!" starts every fight and the tracks ring true. With several rock icon references in the game, Ishiwatari's rock tracks are very memorable and well-suited for each character. (Midnight Carnival, Writhe in Pain, Holy Orders (Be Just or Be Dead) being my favorites)

Rockman 2; OKKUSENMAN! OKKUSENMAN! Airman's BGM is also pretty good.

These will do for now. XD

I remembered: Sakimoto also made the pieces for FFXII's extensive soundtrack. It isn't as heartwarming as Uematsu's, but it sure as hell had that Star Wars epic-awesome feel to it.

A theory of mine is that you get to appreciate the music more when you can connect it with a scene in a game, specially when you play that game a lot.
Sometimes we get carried away either by the excellent gameplay that makes the music seem to sound a bit better or by the epic music that gives the boring game a boost... like my biased opinion for Tenchu: Shadow Assassins for the PSP (syempre ninja e di trip ko na... not!) it seemed to have great gameplay and music but with proper comparison, both the game and the soundtracks suck.
